Happy Monday everyone! Hope you all had a great weekend.
I think I’ve mentioned before that Monday workouts are usually some of my best. I like getting back into a routine after the weekend and always trying to have a good workout to get motivated and start the week out right.
Here was today’s workout!
Overhead Walks (16K kettlebell)
Romainian Deadlifts (2 18LB kettlebells) – 6 reps each side
Renegade Rows – 5 reps each side
…repeat all 4 times
Double Kettlbell Swings (with 18LB kettlbell)
30 seconds of swings/30 seconds of rest for 5 minutes
Pull ups with band (assisted) 10 reps
Goblet Squats (14K kettlebell) 8 reps
…repeat all 4 times
Single kettlebell swings (16K kettlebell)
30 seconds of swings/30 seconds of rest for 5 minutes
On the way home from work I was trying to think of what I wanted to make for dinner. I’m getting back into the swing of fall and mixing in some recipes that I can make without grilling. All summer we basically eat grilled chicken, veggie burgers and grilled pizza so it’s time to mix it up a bit I suppose.
Tonight’s dinner was salsa chicken. Easy peasy.
- Preheat over to 350 degrees.
- Wash and Trim boneless chicken breasts.
- Season with salt and pepper and pound with a meat tenderizer until all the same thickness. (This helps to get any Monday work frustrations out as well:))
- Put the chicken in a glass baking dish. Cover with your favorite salsa (I used black bean and corn salsa tonight) and if you want something with a little sweetness mix just a bit of brown sugar in there.
- Bake for 30 min (give or take, depending on the thickness of the chicken).
