I am obsessed with overnight oats. Truthfully, I’m one of those people who likes to eat the same things over and over until I get sick of them. Then a few months or years later I’ll remember how good something was and the process starts all over again.
Currently, I’m digging on overnight oats and egg/veggie scrambles in brown rice wraps. Overnight oats make an amazing post-workout meal!
I posted this pumpkin overnight oats recipe on Instagram awhile ago, but it is so good that it’s worth a share here too. You know I’m loving on something if I post a recipe here because recipes are few and far between on Sistas of Strength.
These pumpkin overnight oats are gluten free (if you use gluten free oats) and vegan (if you use almond or another non-dairy milk).
Ingredients for Pumpkin Pie Overnight Oats
{Recipe edited 8/30/17}
- 1/2 cup rolled oats
- .5 tablespoon chia seeds
- .5 tablespoon hemp seeds
- 1 serving Vanilla protein*
- 1 cup or so of almond milk
- 3-4 tablespoons pumpkin {not pie filling – just pumpkin}
- Lots of cinnamon and nutmeg
- A little cloves and ginger
- 1/2 banana {optional}
- 1 tablespoon cocoa nibs {optional}
*I usually use Sun Warrior protein. I prefer the Sun Warrior PLUS or the Sun Warrior BLEND over the classic. Use whey or whatever protein you love. You do you.
As for the “recipe” you simply throw all of the above ingredients into a mason jar and refrigerate overnight! I mix in all ingredients and give them a good stir. Right before putting it in the refrigerator, I slice the banana and mix it in a bit.
I highly recommend eating these with a baby spoon to get the full experience.
I usually top my pumpkin pie overnight oats with a little pumpkin fig granola in the morning right before I eat. I’m LOVING this pumpkin fig granola.
update 8/30/17
Purely Elizabeth removed the fig from their granola and it’s even better. The chocolate sea salt granola is also AWESOME.
The process might sound like a lot of work, but I usually make a few jars/containers at once. I’ll mix it up by using different spices, different flavors of protein or steel cut oats instead of regular oats. I also use different fruits as mix-ins and toppings. Berries are delicious too!
